Tasty Veggie Salad/Dip

This is a colorful photo of a salad/dip that I made for the first time. I was quite happy, since it looked like the picture and tasted delicious.

Dressing:

2 tbsp olive oil

1/4 cup red wine vinegar

1 tsp salt

1/2 tsp pepper

Main ingredients:

1 can of black-eyed peas (I used garbanzo beans.)

2 cups of fresh corn (I used a can of corn.)

2 cups of chopped tomatoes

1 ripe diced avocado

1/4 cup onion

1/2 cup chopped cilantro

I combined the dressing and main ingredients separately. Slowly mix them together, so it doesn’t get mushy. Refrigerate for about 20 minutes for the flavors to blend. You can eat this as a salad, dip, or even in a taco.
